Warm Zoodle Salad

This super-quick recipe cheekily takes a pasta salad and swaps the carbs out for some extra veg. If you don’t have a spiraliser at home, the good news is most supermarkets sell ready-made ‘zoodles’ (zucchini noodles) in the fresh vegetable section.

Keto Warm Zoodle Salad

Method

Step 1. First, cook your bacon in a non-stick frying pan over medium-high for 1-2 minutes on each side, or until cooked to your liking. Remove with tongs and set aside to cool, then slice.

Step 2. Reduce the heat to medium and add one tablespoon of olive oil and the garlic. Cook for 30 seconds, then add the zucchini spirals (approx. 2 small fruit) and sauté for 2-3 minutes, stirring throughout.

Step 3. Remove from heat, add the pesto (approx. 2 tb) and toss to combine.

Step 4. Build a bed of the zucchini and top with bacon, parmesan, pine nuts (approx. 1 tb) and chilli flakes. Season to taste and serve with a lemon wedge.

  • 20ml Extra Virgin Olive Oil
  • 1 Clove Garlic, crushed
  • 150g Zucchini, spiralised
  • 50g Basil Pesto
  • 2 Pinches Sea Salt
  • 2 Pinches Ground Black Pepper
  • 25g Parmesan, shaved
  • 15g Toasted Pine Nuts
  • 1 Pinch Red Chilli Flakes
  • 1 Lemon Wedge, to serve
