Smashed Avocado Toast

Method
Step 1. Scoop the avocado onto the toast and roughly mash with a fork. Squeeze over a little lemon juice and season. Top with radish and sprinkle over herbs.

- 1 slice (35g) wholegrain or dark rye, toasted
- Squeeze of lemon juice
- Salt and freshly ground black pepper, to taste
- 1 small radish (2g), cut into matchstick strips
- Pea shoots, sprouts or soft herbs, for sprinkling
