Roast Tomato Toast

Roast Tomato Toast

Method

Step 1. Place the tomatoes, cut side up, on a baking paper-lined baking tray. Sprinkle with sugar and season. Bake in a 190oC oven for 25-30 minutes or until beginning to colour.

Step 2. Spread toast with hummus and top with tomatoes.

 

Tip: Make double the tomatoes and store, chilled, for another breakfast!

  • 10 Cherry tomatoes (110g), halved
  • ½ Teaspoon (2.1g) sugar
  • Salt and Ground Black Pepper, to taste
  • 1 Slice (35g) Wholegrain or Dark Rye Bread, toasted
  • 1 Tablespoon (20g) Hummus
