Open Steak Sandwich

Method
Step 1. Heat the oil in a non-stick frypan, add the mushrooms, onion and seasonings and cook until tender. Lift from pan and keep warm. Season the steak and cook for 3-4 minutes or until cooked as desired.
Step 2. Place toast on a serving plate. Top with spinach, cheese, steak, mushroom mixture and capsicum. Secure sandwich with a skewer and pickled onion.

- 1 Teaspoon Extra Virgin Olive Oil
- 4 Small Mushrooms (120g), sliced
- 1 Small Onion (60g), thinly sliced
- Salt and Ground Black Pepper, to taste
- 1 x 150g Lean Sizzle/Sandwich Steak
- 1 Slice (35g) Wholegrain or Dark Rye Bread
- 1/3 Cup (10g) baby Spinach
- 1x 15g Slice Reduced fat Swiss Cheese
- 1 Small (20g) Roasted Red capsicum
- 1 Small pickled Onion (30g)
