Method
Step 1. Heat the oil in a small non-stick frypan. Add the spring onion, zucchini noodles and seasonings and gently cook until softened.
Step 2. Whisk together egg, sour cream and seasonings and pour into pan. Gently stir to combine and then cook for 3-4 minutes or until nearly set. Place under a medium grill for 2-3 minutes or until cooked through and golden.

- 1 Spring Onion (10g), finely sliced
- ½ Cup Loosely Packed Zucchini Noodles (50g)
- Salt and Ground Black Pepper, to taste
- 60g Egg
- 2 Teaspoons Sour Cream
- 30g Hot Smoked Salmon, flaked
