Method
Step 1. Preheat oven to 180°C
Step 2. Spray a heavy, oven-safe frying pan with olive oil, then place on a high-medium heat and cook the mushroom for 2-3 minutes on each side until browned.
Step 3. Cover and transfer the pan to the oven and cook for 10-15 minutes until mushroom is soft.
Step 4. Transfer to a serving plate, top with approx. ½ a medium avocado as well as crumbled goat cheese. Pour over any pan juices and then serve with chives, chilli flakes, salt and pepper. Serve with a squeeze of lemon if you’d like.
