Step 1. Gently toss together all the ingredients to combine.

- 4 thin slices (75g) gluten-free, sliced ham
- 9 quarters (75g) drained, bottled in brine artichoke hearts
- 5 button mushrooms (60g), halved
- 8 oak leaf lettuce leaves (30g)
- 7 green beans (30g), cooked until just tender and cut in half
- 5 baby bocconcini (25g)
- 2 teaspoons parsley or basil leaves, chopped
- 1 tablespoon reduced fat French dressing
- Freshly ground black pepper, to taste
