Method

  • 9 quarters (75g) drained, bottled in brine artichoke hearts
  • 5 button mushrooms (60g), halved
  • 8 oak leaf lettuce leaves (30g)
  • 7 green beans (30g), cooked until just tender and cut in half
  • 5 baby bocconcini (25g)
  • 2 teaspoons parsley or basil leaves, chopped
  • 1 tablespoon reduced fat French dressing
  • Freshly ground black pepper, to taste
