Step 1. Gently toss together all the ingredients to combine.

- 9 Quarters (75g) Drained, Bottled in Brine Artichoke Hearts
- 5 Button Mushrooms (60g), halved
- 8 Oak Leaf Lettuce Leaves (30g)
- 7 Green Beans (30g), cooked until just tender and cut in half
- 5 Baby Bocconcini (25g)
- 2 Teaspoons Parsley or Basil Leaves, chopped
- 1 Tablespoon Reduced Fat French Dressing
- Freshly Black Pepper, to taste
