Haloumi Skewers
My recommendation is to prepare these in advance, then cook one when you want a snack—they taste much better fresh off the grill! One skewer equals one serve.
Method
Step 1:
Soak four wooden skewers in water for at least 10-15 minutes. This will help stop them from burning and splintering when they’re cooked.
Step 2:
Build your skewers by alternating between zucchini (approx. 1 small fruit), tomatoes, and cheese cubes. Give them a spray with olive oil, then sprinkle over the pepper and mint.
Step 3:
When ready to cook, spray a frying pan or griddle with a little olive oil, then place over a medium-high heat and allow to get nice and hot.
Step 4:
Cook the skewers for 5-6 minutes, turning every minute or two to make sure they’re evenly cooked on all sides. Squeeze over lemon juice and enjoy.

- 120g haloumi, cubed
- 8 cherry tomatoes
- 95g zucchini, cubed
- 4 sprays extra virgin olive oil
- 1 pinch black pepper
- 1 pinch fresh mint leaves, shredded (optional)
- 4 lemon wedges, to serve (optional)
