Method
Step 1. In a bowl toss together the chicken, cucumber, lettuce, carrot, herbs, chilli, dressing and sauce. Cut baguette lengthways and fill with chicken salad.
Ingredients
- 1/3 cup (50g) shredded cooked chicken
- ¼ (36g) Lebanese cucumber, cut into ribbons with a peeler
- ½ cup (35g) finely shredded cos lettuce
- 1 small (35g) carrot, cut into matchstick strips
- 2 tablespoons coriander or mint leaves (or a combination of both)
- 1 red chilli, sliced or sriracha sauce to taste
- 1 tablespoon reduced fat French dressing
- Fish or soy sauce, to taste
- 1 small (100g) baguette
