Step 1. In a bowl toss together the chicken, cucumber, lettuce, carrot, herbs, chilli, dressing and sauce. Cut baguette lengthways and fill with chicken salad.

¼ (36g) Lebanese Cucumber, cut into ribbons with a peeler
½ Cup (35g) Finely Shredded Cos Lettuce
1 Small (35g) Carrot, cut into matchstick strips
2 Tablespoons Coriander or Mint Leaves (or a combination of both)
