Chilli Chicken Bun


Step 1. In a bowl toss together the chicken, cucumber, lettuce, carrot, herbs, chilli, dressing and sauce. Cut baguette lengthways and fill with chicken salad.


  • 1/3 cup (50g) shredded cooked chicken
  • ¼ (36g) Lebanese cucumber, cut into ribbons with a peeler
  • ½ cup (35g) finely shredded cos lettuce
  • 1 small (35g) carrot, cut into matchstick strips
  • 2 tablespoons coriander or mint leaves (or a combination of both)
  • 1 red chilli, sliced or sriracha sauce to taste
  • 1 tablespoon reduced fat French dressing
  • Fish or soy sauce, to taste
  • 1 small (100g) baguette
