Chilli Chicken Bun


Step 1. In a bowl toss together the chicken, cucumber, lettuce, carrot, herbs, chilli, dressing and sauce. Cut baguette lengthways and fill with chicken salad.


  • 1/3 cup (50g) Shredded Cooked Chicken
  • ¼ (36g) Lebanese Cucumber, cut into ribbons with a peeler
  • ½ Cup (35g) Finely Shredded Cos Lettuce
  • 1 Small (35g) Carrot, cut into matchstick strips
  • 2 Tablespoons Coriander or Mint Leaves (or a combination of both)
  • 1 Red Chilli, Sliced or Sriracha Sauce to taste
  • 1 Tablespoon Reduced Fat French Dressing
  • Fish or Soy Sauce, to taste
  • 1 Small (100g) Baguette
