Method
Step 1. In a bowl toss together the chicken, cucumber, lettuce, carrot, herbs, chilli, dressing and sauce. Cut baguette lengthways and fill with chicken salad.
Ingredients
- 1/3 cup (50g) Shredded Cooked Chicken
- ¼ (36g) Lebanese Cucumber, cut into ribbons with a peeler
- ½ Cup (35g) Finely Shredded Cos Lettuce
- 1 Small (35g) Carrot, cut into matchstick strips
- 2 Tablespoons Coriander or Mint Leaves (or a combination of both)
- 1 Red Chilli, Sliced or Sriracha Sauce to taste
- 1 Tablespoon Reduced Fat French Dressing
- Fish or Soy Sauce, to taste
- 1 Small (100g) Baguette
