Step 1. Gently toss together all the ingredients to combine.

- 50g Rice Noodles, cooked as per packet directions
- 1 Small Red Capsicum, thinly sliced (50g)
- 3 Baby Corn Cobs (30g), blanched and halved lengthways
- 1 Spring Onion, sliced diagonally
- 1 Tablespoon Coriander Leaves
- 1 Tablespoon Mint Leaves
- 1 Tablespoon Reduced Fat French Dressing
- Lime, for serving
- Soy Sauce, for serving
