Chicken Noodle Bowl


Step 1. Gently toss together all the ingredients to combine.

Step 2. Serve with a squeeze of lime and a dash of soy.


  • 2 x 55g chicken tenderloins, grilled and sliced diagonally
  • 50g rice noodles, cooked as per packet directions
  • 1 small red capsicum, thinly sliced (50g)
  • 3 baby corn cobs (30g), blanched and halved lengthways
  • 1 spring onion, sliced diagonally
  • 1 tablespoon coriander leaves
  • 1 tablespoon mint leaves
  • 1 tablespoon reduced fat French dressing
  • Lime, for serving
  • Soy sauce, for serving
