Method
Step 1. Gently toss together all the ingredients to combine.
Step 2. Serve with a squeeze of lime and a dash of soy.

- 2 x 55g chicken tenderloins, grilled and sliced diagonally
- 50g rice noodles, cooked as per packet directions
- 1 small red capsicum, thinly sliced (50g)
- 3 baby corn cobs (30g), blanched and halved lengthways
- 1 spring onion, sliced diagonally
- 1 tablespoon coriander leaves
- 1 tablespoon mint leaves
- 1 tablespoon reduced fat French dressing
- Lime, for serving
- Soy sauce, for serving
