Pastrami Salad

This recipe is gluten-free. With optional changes it could also be dairy-free.

Pastrami Salad


Step 1. Gently toss together the beetroot, capsicum, pastrami, bocconcini, spinach, onion and dressing. Spoon grain mix into a serving bowl and top with salad.


Tip: Remaining grains may be frozen in an airtight container for future use.


  • 3 Small Beetroot (180g), sliced
  • 4 Small Roasted Red Capsicum (80g), sliced
  • 4 Thin Slices (50g) Gluten-Free Pastrami
  • 6 Baby Bocconcini (30g)
  • 1/3 Cup (10g) Baby Spinach
  • 2 Thin Slices Red Onion
  • 1 Tablespoon Reduced Fat French Dressing
  • 2/3 cup (66g) Microwave Gluten-Free 7 Ancient Grain Mix
  • Ground Black Pepper, to taste
