Pastrami Salad

This recipe is gluten-free. With optional changes it could also be dairy-free.

Pastrami Salad


Step 1. Gently toss together the beetroot, capsicum, pastrami, bocconcini, spinach, onion and dressing. Spoon grain mix into a serving bowl and top with salad.


Tip: Remaining grains may be frozen in an airtight container for future use.


  • 3 small vacuum-packed beetroot (180g), sliced
  • 4 small roasted red capsicum (80g), sliced
  • 4 thin slices (50g) gluten-free pastrami
  • 6 baby bocconcini (30g)
  • 1/3 cup (10g) baby spinach
  • 2 thin slices red onion
  • 1 tablespoon reduced fat French dressing
  • 2/3 cup (66g) microwave gluten-free 7 ancient grain mix
  • Freshly ground black pepper, to taste
